Mother Nature gave us a wide variety of healing goodies and it is always great to learn more from each other. I like the idea of beets with vinaigrette that you mentioned. Have enjoyed it mixed with shredded red cabbage and that was delicious too. The high level sugar content in beets is something to take into consideration though on an individual basis. "boiled" - in those days my Mom didn't know about steaming instead of boiling veggies LOL. We also to this day can and eat 'pickled beets'. Delicious, although I don't know how healthy that necessarily is. I have also juiced them together with apples, carrots, etc. and yes, definitely high octane. Yummy.
